Easter: Caramel Egg Cookies

With Easter around the corner my friend, Sam, and I decided to get in the festive mood and do some eggcellent baking (sorry). After seeing photos on Facebook of friends' Creme Egg brownies we decided to add a little twist and make caramel egg cookies. mmmmmm

These only took 10 minutes to bake and they were so gooey and wonderful straight from the oven that we managed to scoff two each (as well as a left over caramel egg each).

We made the cookies to this recipe from the wonderful Betty Crocker! We dunked half a Cadbury's caramel egg into the top of each cookie, caramel side down and baked.

Oh my, these were so yummy, it was unreal! A lovely Easter treat that I'm dreading may become a weekly baking occurrence.
